INGREDIENTS:
1 cup packed roughly sliced fresh flat-leaf Italian parsley
1 to 2 small garlic cloves, minced
zest and juice of 1 lemon
1 teaspoon salt
½ teaspoon freshly ground black pepper
1 cup extra-virgin olive oil, divided
1 pound cod fillets, cut into 4 equal-sized pieces
DIRECTIONS:

  1. In a food processer, combine the parsley, garlic, lemon zest and juice,
    salt, and pepper. Pulse to chop well.
  2. While the food processor is working, stream in ¾ cup olive oil until
    well combined. Set aside.
  3. In a large skillet, heat the remaining ¼ cup olive oil over medium-high
    heat. Add the cod fillets, cover, and cook 4 to 5 minutes on each side, or
    until cooked through. Thicker fillets may require a bit more cooking
    time. Remove from the heat and keep warm.
  4. Add the pistou to the skillet and heat over medium-low heat. Return the
    cooked fish to the skillet, flipping to coat in the sauce. Serve warm,
    covered with pistou.
