1 yellow onion, chopped
1 pound green beans, trimmed and halved
1 carrot, peeled and grated
2 tomatoes, cubed
1 tablespoon olive oil
2 teaspoons cumin, ground
6 cups veggie stock
¼ teaspoon chipotle chili powder
1 tablespoon cilantro, chopped


  1. Heat up a pot with the oil over medium heat, add the onion and the
    carrot and sauté for 5 minutes.
  2. Add the green beans and the rest of the ingredients, toss, bring to a
    simmer and cook over medium heat for 30 minutes.
  3. Ladle the soup into bowls and serve.
