2 pounds chicken breast, skinless, boneless and minced
2 tablespoons cilantro, chopped
2 eggs, whisked
1 garlic clove, minced
¼ cup green onions, chopped
1 yellow onion, chopped
1 carrot, sliced
1 tablespoon olive oil
5 cups chicken stock
1 tablespoon parsley, chopped
A pinch of salt and black pepper
- In a bowl, combine the meat with the eggs and the other
ingredients except the oil, yellow onion, stock and the
parsley, stir and shape medium meatballs out of this mix.
- Heat up a pot with the oil over medium heat, add the yellow
onion and the meatballs and brown for 5 minutes.
- Add the remaining ingredients, toss, bring to a simmer and
cook over medium heat for 25 minutes more.
- Ladle the soup into bowls and serve.
